Sea Bass with Couscous and Arugula Tomato Salad


This is the simplest dinner. The flavors went together perfectly.

1 lb. sea bass
1/2 lemon
salt and pepper
1/2 t. butter

wild arugula
1/2 lemon
1 t. olive oil
salt and pepper

Trader Joes couscous blend
chicken stock (as directed by box)
salt and pepper

Make couscous as directed by box, using chicken stock instead of water. When it is finished, season with salt and pepper.

Toss arugula and tomatoes. Top with dressing: whisk together olive oil and lemon. Top salad with salt and pepper to taste.

Place seabass in foil. Top with tabs of butter, squeeze of the lemon and salt and pepper. Bake for about 12-15 minutes at 350 degrees.

Serve together!
