Breakfast Burritos

This was a refreshing change from our typical breakfast routine. Simple and delicious. What was the best part was that I had leftovers of all the ingredients, I put them in a bowl and stored them in the refrigerator. In the morning, I put it on a tortilla, wrapped it in foil, and threw it in the oven. Easiest hearty breakfast ever!

Ingredients
amount of ingredients depends on how many burritos you are making. Make extra for leftovers. 
scrambled eggs
cilantro, chopped
cheddar cheese, shredded
1 medium yellow potato
cumin, paprika, salt, pepper, and olive oil
bacon, cooked and chopped
1 tortilla, warmed

Directions
Make potatoes, by chopping a potato into small pieces. Boil in water until tender. Drain water. Add 1 T. olive oil, cumin, salt, pepper, and paprika. Stir till combine and slightly fried. Set aside.
Assemble burritos by layering the ingredients onto the tortilla.
