French Onion Soup

This is the BEST french onion soup and even better the next day as the flavors meld.

I cut the butter by more than half and then added 1 T. olive oil. You would have NEVER noticed the lost butter. I served the soup with slices of baguette, sprinkled with Gruyere cheese (broiled for 1 minute).
