A few Trader Joe’s ingredients: par-cooked baguette loaves (perfect for meatball subs and for fresh bread that you buy a day ahead); pizza sauce (lower in fat); cheese (I used fontina, but mozzarella is classic and good too. Trader Joes sells the cheapest cheese!)

Pizza sauce (marinara is good too, especially Rao’s)
Fresh grated mozzarella is best, but I used fontina
Make small meatballs (see Spaghetti and Meatballs post for meatball recipe: http://wp.me/p1jTB2-73) . Substitute turkey for pork and beef to make the meatballs easier and healthier.
Bake baguette for 5 minutes at 425 degrees. Cut in half lengthwise. Fill with meatballs. Top with sauce and cheese. Bake for another 5-7 minutes. Serve warm.
