Chocolate Pumpkin Cupcakes/Muffins

Recipe adapted from’s Chocolate Pumpkin Cake:

These were a healthy and delicious fall treat that Mae and I enjoyed baking, frosting as pumpkins, and eating. This recipe is made with cake mix, pumpkin, eggs, applesauce and ONLY 1 T. veg. oil. These really could be made as muffins without frosting and cupcakes with frosting.  I really liked the flavor of the cake; it was different, warm, mildly chocolatey, with a hint of spice (I added a pinch of cinnamon and cloves).

Just a note though, if you didn’t know these had pumpkin in them, you wouldn’t know. It is hard to pick out the flavors in this cupcake once they all blend.
