This is a long recipe with lots of ingredients. It isn’t difficult to make, but it makes a mess of a lot of pans and uses a lot of ingredients. I think it was delicious!!!! and really healthy!!! and really flavorful!! I am just debating on whether it was worth all the work. The filling is flavorful and the shredded chicken is the best. The enchilada sauce it a perfect spiciness. The cheese, green onions and yogurt sauce add the perfect coolness and balance to the texture of the dish.
This dish is served with light sour cream, but since I didn’t have any, I used non-fat plain greek yogurt mixed with cilantro, lime and a pinch of salt. It turned out great because it tasted better than sour cream and was healthier, I would do it the same again next time:)
Oh, and Mae loved eating the filling. I was so happy because it was chicken, green pepper and zucchini!
