This is a great recipe for lunch or a playdate:) Healthy, fresh, and hearty.
1 split chicken breast (roasted with olive oil, salt, and pepper for 30 minutes…cooled and shredded)
1 cup grapes, halved
thinly sliced red onions
1/8 cup pine nuts
handful cilantro, chopped
2 cups baby spinach, chopped
1 1/2 cups uncooked orzo, cooked according to box in chicken broth
about 1 T. olive oil
1/2 lemon, juiced
salt and pepper
In a large bowl, combine chicken, grapes, onions, cilantro and spinach. Had hot orzo, olive oil, lemon and salt and pepper. Top with pine nuts and blend to combine.
