Served with roasted carrots and kale salad.
First of all, roasted carrots are heavenly. All you need is a hot oven (450 degrees), a little olive oil and 1/2 t. butter. NO SUGAR! The carrots sweeten up in this cooking process and no more butter is needed. You definitely taste it with just a little!
Secondly, the meat. Grilling pork tenderloin is so easy and it is so delicious. I buy mine at Trader Joes; they sell them individually, plain or seasoned. Don’t buy the seasoned…EVER! They are high in sodium and don’t taste good. Truthfully, grilled pork tenderloin is very flavorful and tender with just olive oil, salt and pepper. I like to add a sauce. This sauce is healthy. It is fat-free greek yogurt with shredded cucumbers….very Greek! It goes perfectly and is super easy.
1 pork tenderloin, covered in a little olive oil, salt and pepper (the olive oil just keeps it from sticking to the grill too much, so don’t over do it.
fat-free greek yogurt
cucumber, peeled and shredded (with a grater)
pinch of salt
Preheat grill on high. Add tenderloin to hot grill. Cook on high for 4 minutes. Reduce to medium high and cook for another 3 minutes. Flip tenderloin. Cook for 4 minutes. Reduce heat to medium-low and cook for remaining 4 minutes. Remove from grill and let it rest. Meanwhile, make the yogurt sauce. Place about 1/2 cup of yogurt into a small bowl. Add a pinch of salt and about 1/2 a cucumber, shredded. Add more for more flavor. Serve sauce over meat.
