This salad was delicious! The broiled peaches went so well with the caramalized onions. I served it with a light vinaigrette, but it hardly needed a dressing as the peaches were juicy and provided enough juice to dress the salad. The vinaigrette went great though, so I would also recommend it!The arugula that I used for this was a little too peppery. Next time, I think I would do an arugula and spring mix of greens.
Manchego cheese, shaved
1/2 Vidalia onion, caramelized (saute in olive oil, salt and a little sugar for 15 minutes on medium heat-medium low heat. Don’t burn.
Cut peaches into quarters, broil for 10-15 minutes skin side down. Cut each piece in half again. Combine all the ingredients into salad bowls and serve with vinaigrette.

1 T. olive oil
1 t. sugar
