All the berries have been on sale and its summer! So, for Father’s Day, I decided to make a berry cobbler.
It was pretty healthy for dessert and it tasted AMAZING! I’m going to have to make it again before the summer is over:)
1 lb. strawberries, quartered
1 lb. blueberries
1 lb. blackberries
1 cup whole wheat flour
3 T. Crisco
2 T. sugar
2 t. baking powder
1/2 t. kosher salt
1/2 cup milk
In a medium pot, pour all the berries, lemon and 1 T. sugar. Turn the heat on medium and cook for 3-4 minutes. Pour into a deep 8 by 8 casserole dish.
In a medium-size bowl, combine the flour, sugar, salt and baking power. Cut in the Crisco till it’s crumbly. Add 1/2 cup milk and fold with a spoon until just combine. Using a large spoon, take spoonfuls of batter and drop them over the berries, close together, but not touching, until all the batter is gone and the berries are almost covered.
Bake in the oven at 350 degrees for 25 minutes. Eat warm.
