Grilled Skirt Steak and Green Onions

Adapted from foodnetwork’s Marcela Valladolid’s Beer-Marinated Grill Skirt Steak:

skirt steak
green onions
1 lite beer…I used Peroni
4 cloves garlic, chopped
2 T. soy sauce
1/2 t. Siracha
salt and pepper

Combine all the ingredients together in a large bowl. Cover and allow to marinade for 1 hour or overnight. Remove from marinade and lay steak and onions on a hot grill. Cover and cook for 4 minutes on one side and 5 minutes on the other for medium rare. Let the meat rest for 5 minutes and then cut thin against the grain. Serve with grilled onions. This is great by itself or on fajita.
