Grilled Thai Chicken Drumsticks

Jeff wanted Thai style chicken and this is what I found and created. The marinade for the chicken was good, but it wasn’t very Thai. I served this with oven roasted vegetables. It was good, but I think I was enjoying the grilled drumstick more than I was noticing the marinade. This was a super easy meal and healthy!

6 chicken drumsticks
1/4 c. fresh basil
pinch of coriander
1/2 t. ground ginger
3 cloves garlic, minced
1/2 T. red chili paste
1 T. soy sauce
1/2 T. fish sauce
1 T. olive oil
1  T. brown sugar
salt and pepper

Combine all the ingredients, except the chicken, into a small bowl and whisk together. Add and coat chicken in marinade. Cover and refrigerate for 1 hour. Meanwhile, heat grill on high. Add chicken and cook on all four sides about 2 minutes on each side. Reduce heat to medium low and continue cooking untill the meat is cooked through, about another 10 minutes.
