Adapted from Mario Batali’s Eggplant Parmigiana. Check out this video and you will pour a glass of wine and make it instantly. That what I did at least and it was a good night:)
1. I took out the bread crumbs and added basil:)
2. It was so pretty, but a little hard to eat.

4. This is a healthier version than my eggplant parm. because it doesn’t have breading and I think you end up using less cheese in this recipe.
