Cucumber Salad

The cucumber salad is on the left. It is a side and I served it with a sausage and fried potatoes. It goes great with barbecue and summer meals:) This recipe is one of my favorite family recipes. My mom gave it to me when I got married and I happily share it with you!

The key to this recipe is to salt the cucumber and squeeze out the water, TWICE! Watery cucumber salad is the worst!

Serves 2-4

2 1/2 cucumbers, peeled and sliced thin! (consider using a mandolin)
red onion, sliced thin!
1/3 cup light sour cream
2 t. apple cider vinegar
1 t. sugar
kosher salt

Cut onions and set aside in a medium size bowl. Meanwhile, slice cucumbers and place in a bowl. Salt them as they pile up in the bowl. The salt helps to release the water. Let the cucumbers stand for 10 minutes. Lay out two sheets of paper towels. Grab the cucumbers one handful at a time. Squeeze hard, releasing the water into the sink. Place on the paper towels. Once you have done this with all the cucumbers, do it again. This time, place the cucumbers into the bowl with the red onions. In a separate small bowl, combine sour cream, vinegar, and sugar. Stir until it thins out a little. Pour mixture onto the cucumbers and stir to combine and cover the cucumbers. Store in the refrigerator until needed. Stir before serving.
