This was a delicious one pot easy meal. It had a great restaurant like asian taste to it. It was healthy, packed with vegetables and the sauce was different, sweet and spicy. It has honey and soy sauce in it, but neither dominate the taste.
2 T. sesame oil
2 chicken breasts, cubed
1/2 yellow onion, chopped
1 pkg. brocolini (from Trader Joes)
1 red pepper, sliced
2 cloves garlic, coarsely chopped
2 serving udon noodles and 2 T. pasta water, cooked according to pkg.
3 T. honey
1 T. cornstarch
2 T. soy sauce
1 T. hot sauce (like Sirachi)
1 1/2 T. white balsamic vinaigrette
In a small bowl, combine sauce ingredients and set aside. In a large saucepan, heat sesame oil. Add chicken and cook about 2 minutes on each side. Add brocolini, onions, and red peppers. Cook for another 5 minutes or until chicken is cooked through. Add garlic, udon noodles and pasta water. Stir to combine. Add sauce and cook for remaining minute, stirring to evenly distribute the sauce and allow it to stick to the stir fry. Serve warm.
