Fried Plantains

All eyes on the plantain peeking out from the behind the taco. That’s all I got, people:)

I LOVE LOVE LOVE plantains and I make them all the time for lunch with a peanut butter and jelly sandwich and for any and all mexican dinners. These are the easiest thing to make and they are so sweet and delicious. I have found that most people don’t make or eat plantains. So…here is my soapbox…EAT PLANTAINS! They are the cheapest side dish you will ever make and people love them. BTW…not the same as a banana. Jeff HATES bananas, but loves plantains:)

Note on buying plantains: buy them when they look like an overly ripe banana (yellow and a lot of brownish black). They taste the best when they are turned mostly black. They are sweeter this way. If you buy them greenish or completely yellow, then they are starchier, hard, hard to peel and taste like a potato.

2 plantains (1 per person)
1-2 T. olive oil
sprinkle of kosher salt

Heat a small saucepan on high. Add olive oil and plantains. Cook for 1 minute then reduce heat to medium low. Sprinkle with salt. Cook until toasty brown on the bottom, then flip and do the same on the other side. Total cook time is 7-10 minutes.  Serve warm.
