Chicken Arribiata Pasta

Arribiata means spicy. This dish sounds fancy but it’s really easy and simple. Its pretty much basic spaghetti with chicken and red pepper flakes. I love hot spicy tomato sauce. This is a good way to change up the typical spaghetti night.
2 chicken breast, baked in the oven for 30 minutes at 350 degrees with olive oil and salt and pepper. Keep juices for sauce
1 can crush tomatoes
1/2 lb. spaghetti pasta
1/2 yellow onion, chopped
1/2 c. grated carrots
2 cloves garlic, chopped
1 t. red pepper flakes, add more for more spice
salt and pepper

Cook pasta according to the box and set aside. In a large saucepan, heat onions and carrots in 1 T. olive oil for about 5-8 minutes. Add garlic and cook for 1 minute. Add tomato sauce, pepper flakes and salt and pepper. Taste to see if you want to add more spice. Simmer for 20 minutes, covered. Shred chicken and add chicken and cooking juices into the sauce. Stir to combine. Add pasta to the sauce and combine.
