Sweet and Spicy Pulled Pork Sandwich

This is a sweet and spicy sandwich made with pork roast to reduce the fat. Its chewy and something you get your grub on to:) I served this with homemade french fries and sesame cole slaw. Delish:)

Ingredients
pork roast
1/2 cup yellow onion, chopped
1 1/2 T. honey
1 t. cumin
1 t. cinnamon
6 cloves garlic, peeled and crunched
1 can fire roasted green chilis
1/2 lime, juiced
1 T. olive oil
kosher salt
1 cup chicken stock

Directions
In a large dutch oven, brown the meat in olive oil, searing each side for about 2 minutes each. Add remaining ingredients. Bring to a boil, then cover and reduce heat to a simmer. Cook for 1 1/2  to 2 hours. Using a fork and knife shred/cut meat. Return the meat back to the cooking liquids and bring to a boil. Cook for 5-10 minutes or until liquid has reduced. Serve the meat on a bun and enjoy:)
