Couscous and Sausage Stuffed Peppers

I love stuffed peppers! And I always make them slightly different depending on what is in the kitchen. Jeff really enjoyed this dinner. I served it with the Avocado and Prosciutto Crisp Salad.

Yields: 2 servings
2 red peppers, tops removed and seeded
1 serving israeli couscous, cooked according to box
1/2 yellow onion, chopped
1 can diced tomatoes
2 links of hot turkey sausage, removed from casing
1/4 cup feta cheese, crumbled
1/2 t. cumin
pinch of cinnamon
salt and pepper to taste

Preheat oven to 400 degrees.
In a medium saute pan, saute sausage, breaking it up with a spatula. Add onions, cumin, cinnamon and salt and pepper. Cook until sausage is browned. Add diced tomatoes and cooked couscous. Simmer for 5 minutes. Stir in feta cheese. Cut off a small part of the bottom of the pepper so they can stand up straight. Stand them up in a small casserole dish. Fill them with couscous filling. Bake in the oven for 15 minutes or until red pepper is tender.
