Avocado and Prosciutto Crisp Salad


This was a refreshingly different salad, packed with nutrition, and paired great with couscous filled stuffed peppers. Next time, I would personally add apples and gorgonzola cheese. Jeff was happy to keep it the way it was. Radishes, sliced thin, would have been good too:)

Ingredients
Romaine lettuce, chopped small (enough for two people)
1 avocado, chopped
3-4 slices prosciutto, sliced into strips and fried in 1 t. olive oil until crispy
yellow onion, sliced into thin strips (desired amount)
handful of toasted walnuts
Top with salt and pepper (perfect to do with this salad)

Dressing:
2 T. white balsamic vinegar
1 t. sugar
1 T. olive oil

Directions
Combine all the salad ingredients into a bowl and toss. Combine all the dressing ingredients into a jar and shake. Pour over salad and toss again.

  1. This is a total go to from now on. Andy and I LOVED IT! we didn’t feel the need to change anything although i had toasted almond pieces instead. oh my word, i will be making this again and again bette (just like i do with your other strawberry salad. thanks!
