Brussel Sprouts with Bacon

This was the last tapas served. As you can see, it was well liked. These brussels sprouts are very flavorful. There isn’t a lot of bacon. It adds a lot of flavor but not too much fat:) If you haven’t had brussel sprouts since you were a kids, give these a try:)

Ingredients
1-2 lbs brussel sprouts, cut off hard bottoms and cut in half length-wise
1/2 yellow onion, sliced into thin rings and then in half
4 garlic cloves, coarsely chopped
1/4 cup chicken broth
2 slices of bacon, cooked and chopped
2 T. olive oil
salt and pepper, to taste

Directions

In a deep saucepan, brown brussel sprouts in 2 T. olive oil for about 5 minutes. Add onions, garlic, and bacon and cook another 5 minutes. Add chicken broth and cover for 6 minutes. Remove cover and cook on high until almost all the liquid is gone and the sprouts are soft. Be careful not to make them too soft:) Season with salt and pepper
