In attempt to find something that resembles the Potbelly Oatmeal Chocolate Chip Cookies, I adapted smittenkitchen.com’s recipe for Chewy Oatmeal Cookies. The results were perfect. These cookies are chewy and do in fact resemble Potbelly’s cookies.
3/4 c. unsalted butter plus 2 Tbsp.
1 1/6 c. brown sugar
1 t. vanilla
1 1/2 c. all-purpose flour
1 t. baking soda
1 t. salt
1 t. cinnamon
3 cups quick multigrain oatmeal
1/2 cup chocolate chips
In a large bowl, beat butter and sugar together. Add eggs and vanilla and beat until smooth and combine. In a separate small bowl, combine the dry ingredients. Using a spoon, add the dry ingredients to the butter mixture. Add chocolate chips and stir until combine. Using a spoon, drop cookies onto a greased cookie sheet. Bake at 350 degrees for 8-11 minutes.
