Best Oatmeal Chocolate Chip Cookies

In attempt to find something that resembles the Potbelly Oatmeal Chocolate Chip Cookies, I adapted’s recipe for Chewy Oatmeal Cookies. The results were perfect. These cookies are chewy and do in fact resemble Potbelly’s cookies.

3/4 c. unsalted butter plus 2 Tbsp.
1 1/6 c. brown sugar
1 t. vanilla
2 eggs
1 1/2 c. all-purpose flour
1 t. baking soda
1 t. salt
1 t. cinnamon
3 cups quick multigrain oatmeal
1/2 cup chocolate chips

In a large bowl, beat butter and sugar together. Add eggs and vanilla and beat until smooth and combine. In a separate small bowl, combine the dry ingredients. Using a spoon, add the dry ingredients to the butter mixture. Add chocolate chips and stir until combine. Using a spoon, drop cookies onto a greased cookie sheet. Bake at 350 degrees for 8-11 minutes.



  1. I don’t mean to question the master, but did you definitely mean 1 3/4 c of butter? I just thought 3 1/2 sticks sounded like a LOT! So I went with 1 3/4 sticks of butter instead, heh. I also added a few extra chocolate chips. My results were pretty tasty, but definitely “plumper” looking than your picture.

  2. Thanks for letting me know about this:) It is definitely 3/4 cup butter. So…your thought right! I’m always trying to get my cookies plumper. Apparently, stirring the flour in helps with the plumpness and the softness of the butter.
