Pizza Competition (and the winner is…)

ME, of course! 
I shouldn’t boost, Jeff, usually wins our food competitions. But in this case, my Buffalo Chicken Pizza beat his BBQ  Chicken Pizza.

Buffalo Chicken Pizza

4 chicken tenders
4 T. Franks hot sauce
2 T. butter
1/4-1/2 cup blue cheese, crumbled
1 sweet red pepper, sliced into thin rings
1/8 cup cilantro, chopped
Whole wheat pizza dough, I used Giant pre-made dough

Preheat oven to 350 degrees. Spray grease a large cookie sheet. Gently form dough into desired circle size and place on the cookie sheet. In a medium saucepan, cook chicken in 1T. olive oil for about 6-8 minutes or until chicken is cooked through. Remove from pan, and chopped into bite-sizes. Turn on the heat and just cook for about 1-2 minutes or until sauce is coated onto chicken well. Lay chicken onto dough, along with any excess sauce. Cover the pizza. If there isn’t enough sauce, make more using same proportions of butter and sauce. Add the red peppers to the pizza, then the cheese and finally top with cilantro. Bake in the oven for 12-14 minutes or until done.
