Turkey and Vegetable Meatloaf

This is a much healthier meatloaf than the traditional american version, but Jeff and I both agree that it tastes WAY better. I don’t think I will ever make traditional meatloaf ever again. This meatloaf is very flavorful, meaty, moist, and very tasty with or without ketchup. This is a great family staple and great as leftovers too!

package ground turkey
salt and pepper
1 egg
1 cup oatmeal
1/4 cup mozzarella, feta, or ricotta cheese
1/2 bag of fresh baby spinach, chopped
1/2 yellow onion, chopped
1 cup carrots, shredded
1/4 cup skim milk

In a large bowl, combine all of the above ingredients and mix thoroughly with your hands. Place in a greased loaf pan and bake for 45 minutes-1 hour at 350 degrees. Serve alone or with ketchup:)
