Fish Tacos with Mango Salsa

I have got to get better pictures of my food. I need to learn patience because by the time I’m done cooking, I just want to eat, and while it’s hot too! Slow down, Bethany…slow down.

Anyway, fish tacos are a definitely a go to easy delcious meal for me to make. My brother was in town and came over for a last minute dinner. The tacos are very healthy and have a perfect blend of sweet and meatiness.

1/2 lb. firm white fish…I used halibut
2 mangos, chopped
2 avocados, chopped
1/4 of a red onion, chopped
1 t. lime juice

feta cheese
corn torillas

Preheat oven to 350 degrees. To make fish, season it with salt and pepper. Lay it on a piece of  foil. Sprinkle a t. olive oil over the top. Loosely seal the foil around the fish. Place on a baking sheet and bake for 15 minutes or until it turns white on the outside. Remove the fish and let it rest for 5 minutes. Shred or break apart the fish into a small bowl. Pour cooking liquid over the fish and stir. Set aside.
To make salsa, combine mango, avocado, onion and lime into a small bowl. Stir to combine and refridgerate until ready to use.
To assemble tacos, heat corn tortillas. Fill them to fish, salsa and top with feta cheese.
