Zucchini Bread

Adapted from Nanna’s Zucchini Bread.
Makes 2 loaves

3 cups whole wheat flour
5 small zucchini, shredded
3 eggs
1 1/2 cups sugar
1 c. canola oil
1 t. cinnamon
1/2 t. kosher salt
1 t. baking soda
1/2 t. baking powder
1 t. vanilla

Preheat oven to 350 degrees. In a large bowl, combine the sugar and wet ingredients. In a separate small bowl, combine all the dry ingredients. Combine the dry with the wet using a wooden spoon. Pour batter into two greased and floured loaf pans. Bake for 40 minutes or until done.
