Sweet Potatoes with Goat Cheese and Roasted Grapes

I should stop making excuses for my pictures, but seriously, this was taken with a camera phone with baby on hip trying to grab phone:) I saw a picture of this on Pinterest and had to try it (see a common thread here…a bit addicted to pinterest:))

I think that the roasted grapes with the sweet potatoes was delicious! It is the perfect juiciness and sweetness for a sweet potato…great compliment. I guess the goat cheese wasn’t memorable and probably not good enough for the calories. Next time, I would add a little bit of butter and more grapes!

1 sweet potato
1/2- 1 cup grapes, some halved and some whole
2 T. goat cheese, crumbled
salt and pepper
1 t. butter

I was in a hurry to eat, so I pricked the sweet potato and cooked it in the microwave for like 8 minutes…all microwaves are different though, you may need to check it for doneness.
Preheat oven to 450 degrees. Cut the sweet potato in half lengthwise. Use a fork or spoon to stir around the inside of the sweet potato. Place potato in a greased baking sheet or casserole dish. Top with butter, cheese, and grapes. Bake until the grapes and juicy or starting to shrival, about 10 minutes.
