These burgers were refreshingly different from the usually cheese and ketchup, by they weren’t too unusual; just the perfect mix of heat from the chipotle mayo and refreshing crunch from the red onion and pickles.
Yields: 2 burgers
1/2 lb. ground beef, mixed with salt and pepper
2 small ciabatta rolls, lightly toasted
2 slices of gouda cheese
red onion, sliced into thick rings
8 bread and butter pickles
Chipotle mayo: 1/4 mayo, 1 t. lime, and 1 1/2 T. chipotle/adobo sauce
I cook my burgers by searing them on a HOT frying pan, about 1-2 minutes each side. Then, I reduce the heat to low and finish cooking it through there, about 4 more minutes. I like mine medium when cooking burgers at home. Lay the burgers on paper towels to get rid of the excess fat. Place burgers on the bun. Top with cheese, onions, and then pickles. Spread desired amount of chipotle mayo on bread.
I served the burgers with sweet potato fries:)
