Brocoli and Cheese Breakfast Casserole


Had some friends over for brunch and the playoffs. I forgot to take a picture…again, but remembered just in time to get a shot of the remaining casserole nub. I think this was evidence that it was enjoyed:)

This casserole perfectly savory and packed with vegetables. The egg doesn’t dominate the dish…it just holds it together.

Ingredients
6 eggs, beaten
1 cup cheddar cheese, shredded
1 T. canola oil
3 small bunches of brocoli, cut into small flowering piece. Remember to include some stems as well
1/2 package bella mushrooms, sliced
1 clove garlic, coarsely chopped
1 small yellow onion, chopped
2 slices whole wheat bread, cubed
salt and pepper
1/8 cup fresh parsley, chopped

Directions
Preheat oven to 350 degrees.
In a large saucepan, heat 2 T. olive oil. Add brocoli, onions and mushrooms. Cook on medium-high for about 8 minutes or until tender. Add garlic, cook another minute. Remove from heat and let it cool for about 5 minutes.
Meanwhile, in a large bowl, combine eggs, cheese, and bread. Stir in brocoli mixture.
Grease an 8 by 8 glass casserole dish. Add mixture. Bake for 35 minutes or until eggs have set.
