My Mom’s Beef and Vegetable Soup

This soup has been a family staple for years and years and now its a staple in my family too:) I make this soup when we need something hearty, healthy and comforting. Its also a great meal to make for friends in need. Its super flavorful and even Mae loves it:)

1 pkg. beef chuck, cut into cubes (stew meat)
1 yellow onion, chopped
2 large carrots, peeled and chopped or about 1 cup baby carrots
2 stalks celery, chopped
3 large red potatoes, cubed, skin on
1 cup frozen corn
1 cup frozen peas and/or frozen green beans
5 cups beef broth
1 can fire roasted diced tomatoes (any diced tomato can would work)
1/2 cup red wine
salt and pepper
1 T. oregano or italian herb
2 bay leaves

Place beef, onion, carrots, celery, potatoes, seasoning, wine, and broth into a large crockpot. Cook on low for 6-8 hours. Add the remaining ingredients 30 minutes before the soup is finished. Discard the bay leaves.

This soup freezes well and is great for a whole week of leftovers.
