Greek Turkey Pita

It was like a turkey burger, but with small meatball bite-sizes served in a pita with pickled onions, fresh spinach, and feta cheese. It was good, although I think it would have been better if i had better pita bread. Does anyone buy a brand at the store that is sturdy, opens into a pocket without tearing and that they like? I’m all ears. Anyway, this dish is good, different and filling.

1/2 lb. ground turkey, rolled into small meatball bite-sizes
salt and pepper
Pita bread, cut open into a pockets
Pickled onions, see below
Feta cheese
Fresh baby spinach

yogurt and mint sauce

In a small bowl, combine turkey, salt and pepper. Form into small balls and fry in 2 T. olive oil for about 10 minutes or until cooked through. Heat pita bread in the oven until it is warm and toasty. Then assemble the sandwich by placing the meat, onions, feta, and baby spinach inside. Top with yogurt and mint sauce.

Pickled onions: Slice a red onion into rings. Submerge in boiling water for 2 minutes. Remove and immediately place into a bowl of ice cold water. Drain the water. Then, add the rings into a bowl filled with 1/2 cup orange juice, 1/2 c. lime juice, 1 t. cumin and 1 t. sugar. Refrigerate until you use it (preferable 2-24 hours).
