A Mum Mum (my mom’s grandmother name), Jeff, and my favorite:) I’ve adapted my mom’s original recipe to add fruit for Mae and make it dairy-free for me:) Jeff loves these for breakfast and a snack all week!
1 c. whole bran cereal
1/2 c. boiling water, pour over cereal and using the back of a spoon, smoosh into a paste
1 1/4 c. whole wheat flour
1/2 c. sugar (not a very sweet bread, so add 1/4 c. if you like your bread sweeter)
1 1/4 t. baking soda
3/4 t. cinnamon
1/4 t. kosher salt
1/2 cup buttersoymilk (1/2 cup vanilla light soy milk and 1 t. apple cider vinegar to sour it or just use butter milk)
1/4 c. canola oil
1 cup blueberries
Preheat oven to 350 degrees. In a large bowl, combine and smoosh cereal and water. In a separate bowl, combine flour, sugar, baking soda, salt and cinnamon. Stir eggs, buttersoymilk, and oil into cereal mixture and stir to combine. Add blueberries and flour mixture. Stir to combine. Fill muffin tins 3/4 full. Bake for 25 minutes or until cooked through.
