Orzo with Ham and Asparagus

Easy, healthy, quick dinner that is a stick-to-your-ribs kind of meal. I served mine with plantains, but a salad would bring some cool freshness as well:)

1/2 ham steak, cubed
bundle of asparagus, cut into bite-size lengths
1 clove garlic, coarsely chopped
1/2 onion, chopped
2 servings orzo pasta, or I used Trader Joes Harvest Grain Blend
chicken broth
salt and pepper
feta or fontina cheese for sprinkling on top

In a small pot, cook orzo or harvest blend as directed, cooking it in chicken broth rather than water. In a large saucepan, cook onions and asparagus in 1 1/2 T. olive oil for about 10 minutes or until tender. Add garlic and ham. Cook for 2 minutes. Add orzo or grains. Stir to combine. Add salt, pepper, and cheese and serve.
