Crockpot Red Beans and Rice

Adapted from Cooking Light Recipe, 2003

This is an easy, make ahead dinner.  Its different from the regular weekly dinners, but is so flavorful, healthy, and easy that it will become part of the biweekly meals:) Serving this dish with sweet plantains takes 3 minutes and adds a lot. I don’t think I could eat it again without them!

3 c.water
1 c. dried red kidney beans
1 c. chopped onion
1/2 c. chopped red bell pepper
3/4 c. chopped celery
1 t. dried thyme
1 t. smoked paprika
1/2 t. fresh cracked pepper
1 link of kelbasi
1 bay leaf
5 garlic cloves, minced
1/2 t. kosher salt

brown rice, cooked
plantains, cooked in olive oil and kosher salt

Combine all the ingredients into a crockpot and cook on high for 5 hours. Serve over rice. Top with plantains. IT’S THAT EASY!
