Apple Cake with Caramel Glaze

Giving credit where credits due: this is my mom’s recipe. Thanks, Mom:) Although, she would never make a baked good with whole wheat flour:)

Warm moist apple cake dripping with caramel sauce served with vanilla ice cream…mmm..
Okay, I didn’t get the picture when it was perfect, but that’s what this was and it was AMAZING!
The cake is pretty healthy as desserts go. There’s not a lot of fat because it has a ton of  pureed apples which replaces the fat:)
The sauce is not so healthy, but I would suggest serving it over the cake when you eat it so the cake doesn’t get too moist and so everyone can decide how much sauce they want for themselves, especially those watching their figure:)

1 c. sugar
1/4 c. butter
1 egg
3 tart apples, peeled and pureed (if you like chunks, then puree 2 and chop 1)
1 c. whole wheat flour
1 t. baking soda
1 t. cinnamon
1 t. salt

1/2 c. butter
1/2 c. sugar
2 T. corn syrup
1/2 c. dark brown sugar (light it fine too)
1/2 c. evaporated milk (I use fat-free)
1 1/2 t. vanilla

Preheat oven to 330 degrees. Grease a 8 by 8 inch pan. In a large bowl, cream butter and sugar. Add egg and apples. In a small bowl, combine dry ingredients. using a spoon, combine dry and wet ingredients. Pour into prepared pan and bake for 1 hour. Meanwhile, make sauce by heating all the ingredients in a small sauce pan. Cook until butter is melted and ingredients have melded together. Serve over cake with vanilla ice cream.
