Scrabble and Appetizers for Dinner

 After reading The Handmaid’s Tale by Margaret Atwood, I had a strong desire to play and beat Jeff at Scrabble. While he beat me in the last 2 rounds:( It was still fun. We had gin and tonics and 3 appetizers: Prosciutto Wrapped Cantaloupe, Mini Roast Beef Sandwiches and Peppers stuffed with Spinach, Sun-dried Tomatoes, Garlic and Goat Cheese. The peppers were my fav. and therefore listed below:

Bag of mini peppers (yellow, orange, and red)
4-5 T. goat cheese
1/2 bag of baby spinach
5 cloves garlic, minced
3 T. sun-dried tomatoes, in oil, chopped

Preheat the oven to 400 degrees and cover a baking sheet with foil. Meanwhile, prepare the stuffing by heating 2 T. of oil from the jar of sun-dried tomatoes. Add garlic and tomatoes and cook about 30 second or until garlic is fragrant. Add spinach. Cover and reduce heat. Cook for about 2 minutes or until spinach is wilted. Remove from heat and stir. Refrigerate stuffing for about 5 minutes to cool. Meanwhile, cut the tops off the peppers and remove seeds with a knife. Cut a little off the bottom of the pepper too so that they stand up straight in the oven. Add goat cheese to spinach mixture and stir until combine. Stuff the peppers with mixture. Bake in the oven for about 10 minutes or until warm and golden brown on the top. Serve warm.

  1. I love these peppers! Becca made them when we were on vacation and I’m going to make them for a girls night this week. Can’t wait for people to try them!
