Steak Salad with Lime Vinigarette


This recipe was inspired by team #1’s dinner from our family vacation dinner competition.  With the kids at the team leaders and the Top Chef style knive-pull of “beef”, this team decided to do mexican night. They created a delicious, healthy, meal of taco salad, fajitas, margaritas, guacamole, and liquid brownie heaven (to come soon). The dressing on the salad was a hit. This is my attempt to remember and create my own version.  Results=even better! (Sorry, Heath, creator of my inspiration:))

BTW…if you have never done family food competitions, you are totally missing out. It is terrific fun for all ages, you get to feast, its ways cheaper for a large group, and you get new and fun ideas to take home with you.

Oh…and I forgot to mention, this meal was made for my great friend, Julie’s’ birthday. Happy Birthday, Jules. Love you, dude!

Ingredients
Petite sirloin, grilled and sliced
1 tomato, chopped
3 ears corn, grilled and cut off the ear (rub ear with a little olive oil before putting on the grill)
3 stalks green onion, chopped
cheddar cheese or queso fresco

Dressing:
1 lime, squeezed
1 T. honey
1 T. white balsamic vinegar
1 t. cumin
salt & pepper
1 1/2 T. olive oil

Directions
Assemble the above ingredients in order of choice:)
