Whole Wheat Baguette, toasted
Deli meat: low-sodium ham, mortadella, and prosciutto (or salami)
Roasted red peppers (make your own! see below)
Red onions, sliced
Italian vinaigrette: 1/4 c. red wine vinegar, 1 clove garlic (minced), 1 T. olive oil, salt and pepper, and 1 t. dried oregano or italian seasoning whisked together
3 ears of fresh white corn, cut off the ear
1/2 tomato, chopped
1/4 cup red onion, chopped small
1 avocado, pitted and chopped
1 T. olive oil
Salt & pepper
Roasted Red Peppers: Preheat oven to 500 degrees. Cut a red pepper in half lengthwise. Remove the seeds and stem. Place pepper open side down on a foil covered baking sheet. Drizzle lightly with olive oil. Cook for 15 minutes or until skins is dark and blistered. Remove from the oven and let peppers cool to the touch. Remove skin from the pepper. Slice pepper into thin slices and mix with a little olive oil. Store in the refrigerator.
Sandwich: Use the above ingredients to assemble your sandwich.
Corn Salad: Mix all the ingredients above in a bowl. Refrigerate to blend flavors more.
