Lentil Burger with Tzatziki and Feta


This recipe is adapted from foodnetwork.com’s “Veggie Burgers”

Jeff had been raving about this Lentil Burger he had at a health food store. So..I attempted my own. It was good, just wasn’t juicy like a regular hamburger. Next time, I think I would put the feta cheese inside the burger to make it more moist. If you want a healthy burger though, this one is very good and packed with flavor:)

Ingredients
1 cup green lentils
1/4 cup barley
1 T. olive oil
2 clove garlic, minced
1/2 lg. onion, chopped
1 t. freshly grated ginger
1 1/2 T. curry
1/2 t. cumin
4 T. fresh cilantro, chopped
1 cup italian bread crumbs
1 whole egg and one egg white, beaten
salt and pepper

Serve with tomato, feta and homemade tzatziki sauce = non-fat greek yogurt, freshly grated cucumber (peeled and seeded), and salt (garlic, optional)

Directions
Soak lentils and barley in cold water for 15 minutes. Bring water to a boil and cook for about 20 minutes or until tender. Drain liquid and place into a large bowl to cool. Meanwhile, saute garlic, onions, ginger, cumin and curry in oil for about 5 minutes or until onions are tender. Be careful not to burn the garlic and ginger. Add mixture to the large bowl. Add remaining ingredients into bowl  and mix. Transfer 1 cup of the mixture to a food processor and puree; return to bowl with remaining mixture.  Make patties and refrigerator for 1 hour. Preheat oven to 400 degrees. Heat a skillet with 1-2T. olive oil. Cook burgers for 2 minutes on each side, then transfer to preheated oven and cook for 10 minutes.
