1. Homemade Pasta isn’t that hard to make.
2. Problems with making homemade pasta are that you need the right equipment (which I have) and you need counter space (which I don’t have); and therefore, often deters me from making it.
But…this week, I did and it was worth it:)
Spinach Pasta with Sun-dried Tomatoes
Ingredients for 1lb. pasta
2 c. flour
pinch of kosher salt
2 eggs, room temp.
1 1/2 cups cooked baby spinach, water drained
1/4 cup sun-dried tomatoes with olive oil
1/8 cup dry white wine
1/8 cup pasta water
1/4 cup yellow onion, chopped
2 cloves garlic, coarsely chopped
handful toasted pine nuts
Combine all of your pasta ingredients into a food processor and blend until it forms a ball. Place ball on flour dusted counter and feed through the pasta maker, to notch #6. Cut into fettuccine. Boil pasta.
Meanwhile, make sauce by putting sun dried tomatoes and 2 T. tom. oil into saucepan. Add onions. Saute until onions are tender. Add garlic. Add white wine. Reduce sauce by half. Then add cooked pasta and pasta water. Cook for 1 minute. Remove from heat and serve with toasted pine nuts.
Serve with mild or sharp sheep or goat cheese and red wine. We had “Domaine De La Madone” 2009, a Beaujolais Le Perreon from Arrowine in Falls Church, VA. Great wine!!!
